A feast of celebration, togetherness and remembrance. Symbolic foods on the Seder plate tell the story, but Passover feasts can include everything from brisket to brownies. Retelling the timeline of the Jews’ exodus from slavery to freedom, and guiding children through the mysteries of the Seder plate, is the main order of business. But so much time is spent with games, storytelling and the rituals of this holiday that just about anything goes for supper. Instead of fancy linens and priceless china, the big focus during the eight days of Passover is on family, fun and Jewish history. So planning a Seder meal can be as simple or complicated as the cook decides. Either way, it pays to have a gameplan so that once the storytelling is through hungry appetites can be satisfied. It wouldn’t be Passover without endless varieties of Kugel. Traditional noodle kugels (like the first one on our list) are great with baked chicken. Newer versions, both sweet and savory, combine matzoh or noodles with everything from mushrooms to pineapple. Substitute oil in any recipes that call for butter. Sweet Endings Prepare a wide array of desserts to add a little variety to all eight days of the Passover celebration. Discriminating sweet tooths may complain desserts “taste like Pesach,” so give them something to rave about. For chocolate lovers, go with a dense, fudgey brownie or chocolate mandelbrot. If chocolate isn’t your thing, how about sponge cake? These favorites are top-of-the-line.
